Here’s yet another healthy treat. All you need for this recipe is chia seeds, coconut milk, ginger, one red grapefruit, vanilla extract and shredded coconut.
Healthy Coconut Chia Pudding
Chia Pudding Ingredients
1 cup (2 dl) coconut milk
1 tbsp chia seeds
1/2 red grapefruit
1/2 tsp grated ginger
1/2 tsp pure vanilla extract
shredded coconut for topping
How to make this delicious and super easy coconut chia pudding
- Mix coconut milk and chia seeds in a bowl.
- Let them soak at least for 2 hours in a fridge, stirring them a couple of times while in the fridge.
- Peel the grapefruit and remove the seeds. Slice it up.
- Grate the ginger.
- Mix everything together with a spoon and add vanilla for sweetness. Add some shredded coconut on the top.
- Enjoy. :)
